On Friday evening, I dined with ReneG, Gypsy Boy, Sazerac and his wife at Bucovina, a Romanian restaurant. For a first course, we ordered a range of soups from the
menu including Tripe Soup.
This tripe soup could also be called Cream of Tripe Soup from the cream sauce base which seemed to be heavy in cream and perhaps some chicken stock. The tripe was so very tender I made a comment which one may interpret as a joke though I was quite serious: this soup really reminded me of Campbell's Cream of Mushroom Soup except tripe substituted for the mushrooms.
While the bean soup seemed to be most everyone's favorite, I must admit I leaned toward the unexpectedly rich tasting tripe soup.
