    Kristen,

The National Restaurant Association and CCC runs the class in Chicago. You pay your fee, attend for 3 days. Take the exam and you have your license. Once you have it, you simply have to renew it every few years.

What kafein said...pay attention and remember the facts. Hot food hot cold food cold. 40-140...wash your hands. :P (sorry if that didnt make sense...but its been drilled into my head) I've been certified for sanitation 4 times and happy with it each time. (3 times in Illinois and once in AZ...there's a seperate test for Chicago then there is for the state of IL) Take it serious and pass the first time...I've seen too many people have to pay an additional $70 or so dollars to retake the test.
    GOOD TIMES!
