    Reminder: Giorgio Cravero and Daphne Zepos are coming to talk and taste Parmigiano-Reggiano THIS TUESDAY, JUNE 23rd at 2pm at Kendall College in Chicago.

    Don't miss this once in a lifetime opportunity to hear Giorgio describe how he and his family have selected and matured Parmigiano-Reggiano in Bra, Italy since 1855. Included will be an in depth history of the cheese and its political and culinary context provided by Daphne Zepos, an authority on mountain cheeses and affinage.

    This is an excellent opportunity for the experienced chef or cheesemonger to become intimate with the key techiniques and processes of cheesemaking through the lens of one of the world's most historical and essential cheeses. It will also provide a baseline introduction to those newer to the field, helping to fill in the gaps between cow and consumer.

    Finally, Giorgio and Daphne will lead a tasting of four distinct Parmigiano-Reggiano and one U.S. produced Parmesan.

    Hi,

    It is opportunities like this that make me wish I lived and worked in the city. I'd love to drop in, check it out and get back to work. Unfortunately it is too much of a time commitment to drive in (or worse, take the train).
