    Pastoral welcomes famed Italian cheesemaker Giorgio Cravero and cheese advocate Daphne Zepos for a demo and free tasting of Cravero’s famed Parmigiano-Reggiano cheese, plus Italian wine sampling

    WHAT
    Pastoral will host a free wine & cheese tasting with famed Italian cheesemaker Giorgio Cravero and cheese advocate Daphne Zepos on Wednesday, June 24, 2009, from 5:30 p.m. - 7:30 p.m., at Pastoral’s Loop location, 53 East Lake St., in Chicago.

    Meet the cheesemaker, watch the team crack into a Cravero wheel of Parmigiano-Reggiano using the traditional cheese-cutting tools and methods, then sample the celebrated cheese paired with small batch, artisan Italian wines. A distinctive opportunity to learn more about the art of cheesemaking, wine pairing and (of course) tasting.

    Daphne Zepos ranks among the most outspoken and dynamic cheese advocates in the United States. A consultant and teacher at the Artisanal Premium Cheese Center, Zepos is also a former board member for the American Cheese Society (ACS), was Chairperson of the ACS Annual Cheese Competition from 1999 to 2002, and served as a consultant and spokesperson for the California Milk Advisory Board. Zepos is founder of the Essex Street Cheese Company and a co-founder of the Cheese of Choice Coalition, an advocacy group dedicated to the preservation of raw milk and small production cheeses. She also trained as a chef at the Peter Kump’s New York Cooking School (now the Institute of Culinary Education) and began her career at San Francisco’s renowned Campton Place restaurant where she developed its critically-acclaimed cheese service.     Wonder how one becomes a "cheese advocate . . ." Those underprivileged, disenfranchised cheeses need advocates, I guess. :)

    I got this notice as well and I think I'm going. Anyone else going and, if so, would you like to meet up before/after? Maybe go out afterwards for dinner somewhere?
