Pastoral will host a free wine & cheese tasting with famed Italian cheesemaker Giorgio Cravero and cheese advocate Daphne Zepos on Wednesday, June 24, 2009, from 5:30 p.m. - 7:30 p.m., at Pastoral’s Loop location, 53 East Lake St., in Chicago.
Meet the cheesemaker, watch the team crack into a Cravero wheel of Parmigiano-Reggiano using the traditional cheese-cutting tools and methods, then sample the celebrated cheese paired with small batch, artisan Italian wines. A distinctive opportunity to learn more about the art of cheesemaking, wine pairing and (of course) tasting.

A consultant and teacher at the Artisanal Premium Cheese Center, Zepos is also a former board member for the American Cheese Society (ACS), was Chairperson of the ACS Annual Cheese Competition from 1999 to 2002, and served as a consultant and spokesperson for the California Milk Advisory Board. Zepos is founder of the Essex Street Cheese Company and a co-founder of the Cheese of Choice Coalition, an advocacy group dedicated to the preservation of raw milk and small production cheeses.
