    Food of the Philippines: Two Perspectives

    Janet Rausa Fuller, Food Editor, Chicago Sun-Times

    One came here as a child from Manila, the other was born in the Midwest of Philippine parents, and both brought with them to Chicago the culinary and cultural influence of the Philippine Islands. Come join us to learn from two culinary ambassadors about their beloved cuisine and culture.

    Chef Subido, who recently returned from a visit to her native country, will share her early memories of life in the Philippines and describe her family of food lovers, and their specialties She will also discuss regional food differences, and how Filipino food may be poised to cross over in America like Thai, Indian, Chinese., etc. And, she will providing a food sampling for us.

    Ms. Fuller, who was raised in Kansas, will give her perspective as a second-generation Filipino American and give us a tasting of one of her family’s favorite desserts.

    BIOGRAPHIES:

    Kristine Subido: Although she once considered a career in professional dance, Chef Subido chose to make her moves in the kitchen, gaining her formal culinary training at Kendall College, and apprenticing under Chicago chef Steve Chiapetti at several locations, and in Lyon, France at Paul Bocuse’s Le Sud. She is now earning accolades for her international cooking as the executive Chef at Wave, where she also gives cooking classes for the public.

    Janet Rausa Fuller: A Kansas native, Janet was a versatile Sun-Times reporter for nine years, but wrote about her first love, food, whenever she had the opportunity, eventually garnering the job of food editor .

    Cost of the lecture program is $5, $3 for students and members
    and no charge for CHC members and Lexington faculty and students.

    Just called in my reservation for this event. I find Filippino food fascinating, not the least because there are a fair number of places offering it in Chicago and yet it's below radar for most non-Filippinos...plus, some dishes seem somewhat challenging to Western tastes, and I like a challenge.
