    I've damn near given up on ordering lasanga from any place. What I always get are some limp noodles hiding under a sea of red sauce and mozzarella. With most pizza places serving lasagna and countless Italian restaurants in this vacinity, you'd think someone would do it to my liking. I know what I want is not authentic, but neither is what is normally served.

    Specifically what I seek is layers of noodles, meat sauce, riccotta, parsley, mozzarella, and parmagian. NOT slathered in more sauce. NOT drowning in more mozzarella. And definitely NO cottage cheese, please!

    I really enjoyed the lasagne I had at Dave's Italian Kitchen in Evanston. You are describing something that is very subjective, so it's hard to tell from your description exactly what you are looking for, as most lasagne I've seen is made with red sauce and cheese. I found Dave's to be pretty good with no one ingredient "stealing the show". Maybe it would be to your liking as well.

    I had a good lasagna at La Bocca della Verità several months back. It had a light layer of balsamella between each of the interior layers of pasta and was topped by a light tomato sauce and a bit of mozzarella di bufala. It's not currently on the menu, so it's probably an occasional item.

    Merlò does a lasagna verde I like, too.
