There are composting programs in Chicago, some associated with community gardens, though I don't know if any will pick up your stuff (Google "Chicago Composting") and the city makes composting bins available at low cost to residents. I want to start composting, but I'm not really sure where to put my bin... and I don't think I'd have capacity to use all of a catering outfit's leftovers

And if you need stuff to compost, you can go to a coffee shop (I know Starbucks does this) and they will give you their grounds for free)
So not really helpful to you, but if a few of us start composting, maybe we can combine to cover your output?
