I just looked at a rental kitchen space in the 1900 N. Austin area (west side of Chicago). It's way too big for my needs, but they're open to several caterers sharing the space. Monthly rent, not on an hourly basis, cost dependent on how many people are splitting the space, I guess. This isn't my deal, I'm just passing on the info:
The kitchen has the usual stove, hoods, convection ovens, sinks, walk-in cooler, freezers, prep area, etc. Passed city inspection August 2007. Get this: it is also USDA approved for cold-smoking meats. It has 2 wood-fired smokers. Mmm.
